One time, Aunt Jeanine started dating a free spirited vegetarian. Mama wasn't thrilled but she always said everybody should feel like family thus Sunday dinner always came with this Eggplant Parmesan. Full of seasoned eggplant, baked and topped with Mama's slow simmered sauce, melted mozzarella, and a generous dusting of parmesan. Aunt Jeanine's boyfriend didn't hang around long but this dish stayed for the long haul.
